Strawberry Muffins

 This is my all time favourite muffin recipe, that's super easy and really quick!



Ingredients:

2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup white sugar
1 egg
1 cup milk
1/4 cup butter 
1 teaspoon vanilla essence
Directions:
1. Preheat oven to 400 F (205 C)
2. Mix all the dry ingredients in a bowl. In another bowl, whisk the egg and stir in the milk, butter and vanilla. Once combined, add the entire mixture to the dry ingredients and mix quickly and gently with a fork. Don't worry if the batter is lumpy.
3. Add chopped strawberries and mix gently. 
4. Pour into paper lined muffin cups.
5. Bake for 25 minutes or until a skewer inserted in the center comes out clean. 
You could always use any other fruit or even cheese/ bacon/ ham for savoury muffins.

  1. Hi, i found your site form the foodgawker pages, I thought your muffins looked great- 2 questions: there were no strawberries in the ingredients so how much, and what is vanilla essence? Is it interchangeable with extract?

  2. Hi Katie, I used about a cup of chopped strawberries. I suppose you could use as much or as less as you like. I found that if you chop them too small, they tend to shrink and you don't get to bite into one. So cut them slightly bigger.
    Vanilla extract is the same as vanilla essence, I used one teaspoon.

  4. I think I should add some strawberry jam filling inside of these cupcakes to taste more the strawberry flavor. This really seems to be so sweet. Thanks a lot for sharing the recipe.

  5. You could try that, or maybe some strawberry frosting! Yum! :)
    What I do, is add about a cup of strawberries, and I slightly squish them with a fork before adding them to the batter, that seems to help with the flavor!
